Weighing 305 pounds isn’t fun.  Fourteen years ago I lost over 150 pounds and regained my life.  My name is Diane Carbonell, and I would love the opportunity to help you gain control over your eating habits and have your life be enriched through proper nutrition and exercise.  I didn’t have gastric bypass surgery, took no supplements, never ate weird food and didn’t even join a group.
As a wife to my husband John and mom to seven wonderful children, I know how hard it is to find time for yourself.  Weight loss is possible in any amount, but the key to a successful weight loss plan is not just that you can lose weight during the plan period, but that you can maintain that loss throughout your life.  As I think back on the last thirteen years, the best thing I ever did for myself and my family is to get healthy and pass that goal onto my children and to others.

Do you have an affection for Ritz crackers but know in your heart they are not good for you? The ingredient list reads like a chemical mixture rather than a food you should eat.
I have always liked the crackers but rarely buy them because I know that they have no nutritional value, are easy to eat a million of at a time, and have empty calories. However, when I make soup, the whole family gets a bit sad if there aren’t crackers to go with it.
So, I set about finding a way to make homemade Ritz crackers using whole wheat flour and wholesome ingredients.
Here’s the result and I have to say they are pretty tasty and cute to boot!

I used a food processor for these crackers and it was so fast it was ridiculous. I think it took me about 2 minutes to put everything together and mix it up.

Once you have the dough mixed, roll out your homemade Ritz cracker dough as thin as you can get it. I use dowel rods on either side of my long silicone rolling pin to get it perfectly even. You do not have to use the dowel rods but it makes it easier to get the dough thin.

Once you have the dough as thin as you like it, use a cookie cutter to make small round crackers. Then, using those same handy dowel rods or other sharp object, poke holes in each cracker. The holes allow air to circulate more freely when the crackers are baking.

Place each cracker on a baking sheet lined with parchment paper. Bake at 400 degrees for 12 to 15 minutes. I test them at the 12 minute mark by picking one up (carefully) and breaking an edge off. It shouldn’t go “crunch” or else you’ve overcooked them. It should lightly break with a little resistance. If you get that consistency when done baking, when the cracker cools, it crisps up perfectly.

I sprinkle a little Kosher salt on them before I put them in the oven because I do not add salt to the recipe. Your choice though. :)
One batch makes me 110 crackers, but they are slightly smaller than traditional Ritz crackers. The nutrition information is at the bottom of the recipe.

INGREDIENTS
3 teaspoons Baking Powder
5 tablespoons Organic Unsalted Butter (You can use regular butter as well.)
1 tablespoon Coconut or Olive Oil
2/3 cups Cold Water
2 cups Whole Wheat Flour
DIRECTIONS
Oven preheated to 400 degrees.

1. Place the flour and the baking powder in a food processor. Mix for a couple seconds until combined.
2. Slice the butter into pats and drop the pats into the food processor as you pulse the machine.
3. Look for your dough to be the consistency of wet sand.
4. Start the processor on mix and add the oil. Mix for about 10 seconds.
5. While the processor is on mix, drizzle the water into the mixture.
6. Mix until the dough comes together to form a ball.
7. Roll out the dough on a non-stick mat or clean countertop. Roll it as thin as you can.
8. Cut the dough into circles, squares, or whatever shape you want.
9. Place on a cookie sheet lined with parchment paper.
10. Bake in a 400 degree oven for 12 to 14 minutes, or until slightly crispy and golden brown.
11. Allow to cool completely.
